My favourite healthy snack – Dark Chocolate Covered Strawberries

Some of the most decadent snacks in life, are actually good for you.

Take for example, this simple recipe for Dark chocolate covered strawberries.

Well it isn’t really a recipe, because it only involves dumping everything together and letting it set!

What you need are… 

Large, ripe strawberries, with a nice stem (to hold, when you are dipping). If you have organic strawberries even better – no pesticides.

Wash the strawberries in cold water.

Dry them thoroughly. If they are wet, the water will cause the chocolate to “seize” and become a clumpy mess.

Place the berries on a tray or plate lined with paper towels while you melt the dark chocolate

For the chocolate dip I like Valrhona 70% dark chocolate. That percentage is the amount of chocolate solids. The higher the percentage, the more bitter and the less sweet the chocolate is.

You can either melt the chocolate in pot, or microwave it.

Ingredients:
4 big squares of Valrhona 70% dark chocolate
1/2 tablespoon coconut oil
1 tablespoon unsweetened almond milk
20 large strawberries

Directions:
Combine chocolate, coconut oil, and almond milk in a small mixing bowl. Microwave for 20 to 25 seconds, then mix well until smooth. Dip each strawberry into chocolate mixture until evenly covered and place on a wax- or paper-lined cooking sheet. Refrigerate for 1 hour.

Remove and Ta-dah! Perfect chocolate coated strawberries for a healthy snack!
